Easy pastries packed with seasonal flavors

Fall calls for flaky pastries bursting with comforting flavors. Savory galettes are perfect for these cravings, and pâté makes a tasty and convenient filling. These open-face pastries are actually fairly simple to make. But they’re just as delicious as bakery-quality treats!

Pâté Galettes—the savory pie shortcut
When baking a pie feels too daunting, pâté galettes are the easier option. You can make a flaky crust from scratch, or choose a convenient store-bought alternative like frozen puff pastry or refrigerated pie crusts. For fillings, stick to the no-stress route—without compromising wow-worthy flavors. Pair ready-to-eat Alexian Pâtés with seasonal fruits and veggies.

Mushroom & Onion
In your choice of pastry base, spread a layer of creamy ricotta cheese. Then add small cubes of Wild Forest Mushroom Pâté, caramelized onions, and sautéed mushrooms.

Fig & Truffle
Take advantage of fig season with a sweet-meets-savory balance of the jammy fruits and umami-rich Truffle Mousse. Add goat cheese for a tangy contrast, then follow with dollops of creamy mousse. For the top layer, arrange sliced figs and finish them off with a drizzle of honey before baking.

Pear & Duck Rillette
A trusty decadent flavor combination! Start by adding blue cheese crumbles to the pastry dough. Top with spoonfuls of shredded Duck Rillette, fresh sliced pears sprinkled with cinnamon, and walnuts for texture.

Butternut Squash & Pheasant
Roast your butternut squash first, and let it cool. Then slice and toss the cooled squash with cubes of hearty and pecan-loaded Pheasant Rosemary Pâté, caramelized onions, and slices of semi-soft Gruyère.

Apple & Duck
Begin the filling assembly with a generous layer of smooth Duck Liver Mousse. Then top your mousse with alternating layers of fresh apple slices and sharp cheese.

Egg, Tomato, & Black Peppercorn
To make this breakfast of champions, first, slice and salt heirloom tomatoes. Then spread a layer of Black Peppercorn Mousse, a perfect creamy, peppery contrast to the tomatoes. Layer those on and bake. Remove from the oven about 8 minutes early and crack an egg into each pastry face, and bake until the eggs reach your ideal consistency.
