What to know about the classic savory snack

In the pâté business, we meet lots of people who have lots of questions. You might have a few yourself, which is why we’re here with quick answers to the pâté queries we’re asked most frequently.

What IS pâté exactly?
Pâté is a savory meat spread that’s been enjoyed for centuries. While it’s traditionally tied to France, pâté recipes are woven through many European countries and cultures.

Do you have to cook pâté? Is it raw?
Nope, pâté isn’t raw. It’s fully cooked meat bound with other ingredients to varying consistencies, like creamy smooth mousses and heartier coarse or country-style pâtés. Some pâté cooking methods vary, but they’re typically baked in a loaf-style terrine. We cut our terrines into 5 oz slices, then those fresh slices are sealed, packed, and land at stores for you to enjoy.

Is all pâté meat?
Nope! Traditional savory pâtés blend meat, fish, and vegetables, with fats, herbs, and spices. But there are meatless, vegetable pâtés, like one of our favorite flavor combos for grazing, Eggplant & Goat Cheese Pâté. There are plant-based vegan pâtés available too, like our fresh Tomato & Basil and Earthy Mushroom varieties.

Is all pâté liver?
No, not all pâtés have liver. But many do! Organ meats are used in pâtés because of their depth of flavor, and they’re also a great source of nutrients. Liver is an ingredient in all of our Alexian mousses and meat pâtés.

Do you need to eat it all at once?
Not unless you want to! Pâté is meant to be enjoyed, usually with some great cheeses, excellent wines, and even better company. But you can certainly save leftovers. We recommend wrapping pâtes in plastic and storing them in an airtight container in the refrigerator. Just be sure to finish your pâté 5-7 days after opening.

Is pâté only for charcuterie?
Not at all! Pâté is an easy protein you can enjoy for breakfast, lunch, dinner, and snacks in between. Spread mousse on your morning toasts, add coarse-cut pâtés to salads and sandwiches, layer on grilled steaks and burgers.
