Corn Salsa & Queso Fresco
Queso fresco is creamy and smooth, pairing nicely with the bright, fresh flavors of a corn and black bean salsa. To make the salsa, add equal parts corn and black bean, a handful of fresh, chopped cilantro, a spritz of fresh lime juice and a sprinkle of salt, pepper and cumin.
Lox & Cream Cheese
Bagels aren’t ideal for a summer snack – they can be heavy and overly- filling, leaving you ready for a nap after you eat. Instead, try your favorite bagel combo on a flaky cracker, and get the best of both worlds.
Caprese
Caprese is (in our humble opinion) the salad of the summer. Tomatoes and basil are at their peak season, and fresh mozzarella is filling without weighing you down. Slice a log of fresh mozzarella into thin slices, and layer onto a decorative serving platter between slices of fresh tomato and fresh basil. Drizzle with a balsamic vinaigrette or simply with extra virgin olive oil and fresh cracked salt and pepper.
Pâté
We would be remiss if we didn’t suggest pairing our pâté with our crackers. Both made with love and created to pair perfectly, any of our pâtés create a satisfying meal in mere seconds.
Our Wild Forest Mushroom Pâté is a classic, yet tantalizing combination of pork and chicken with bold bites of earthy mushroom.
For a lighter spread, we wholeheartedly suggest one of our Vegetable Terrines – such as our summertime favorite, Eggplant with Goat Cheese and Roasted Red Peppers.
Tuna & Avocado

Make & Take Veggie Cups
Here’s a little secret: pureeing any of our pâtés with a couple of tablespoons of Greek yogurt is an easy way to make a delicious dip, perfect for veggies, pita chips, or cheese.
One of our favorites, the Mushroom & Artichoke terrine, works particularly well. Simply combine the pâté and the yogurt and blend until smooth. Pour evenly into the bottom of 12 oz. plastic cups. Place vegetable sticks directly into the dip – sliced bell peppers, carrots, and celery are all great options.
For more diversity, try it with fresh mozzarella balls, cheddar cubes, cherry tomatoes, pretzel rods, or pita chips!

Using more elevated ingredients such as spinach wraps, grilled veggies, and of course, our decadent pâtés, make them perfect for a simple yet sophisticated beach lunch. One of our favorite combinations is our Truffle Mousse, with grilled onion and shredded smoked gouda.
And for the kids? Go classic with peanut butter and jelly pinwheels or try something new and fun. We love pizza pinwheels – a classic tortilla wrap with pepperonis, shredded mozzarella and just a touch of marinara (we don’t want them to be messy!).
Summer Sides
Sometimes you need a little something between lunch and dinner. We want to share some of our favorite snack recipes from some of our friends across the country.
When the weather is this nice, it’s hard to stay indoors – even for dinner! Picnics are the perfect way to spend a little extra time soaking up the sunshine, whether it’s with your family, partner friends or on your own. To make the planning as painless as possible. we’ve gathered our very best advice and recipes for creating a picnic to remember.
The Food
Mini-Quesadillas
Quesadillas for a picnic? We know it sounds a little atypical, but these are great for picnics for two very important reasons: they’re easy to make in large batches and they don’t get soggy!
You’ll need 6” flour tortillas – a good rule of thumb is to estimate about 3-5 per person, depending on if you’re bringing other sides and if it’s a dinner or lunch meal. It’s never a bad thing to have leftovers!
Place the tortillas on a large baking tray, lined with parchment paper or aluminum foil. Top with sliced red and yellow bell peppers, your preferred blend of Mexican cheeses and finall, put a spoonful of our rich Duck Rillette. Fold in half, and place them in the oven at 375 degrees F for 7-10, or until the cheese is melted and the tops are slightly golden brown. To keep warm, wrap them in aluminum foil.
You’ll need sour cream, salsa and guacamole to dip. For accompanying sides, bring along chips and guacamole, spanish rice, refried beans or an avocado salad.
Pasta Salad
Pasta salad is a lovely picnic dish – it’s filling, versatile and is fine when eaten cold or warm. Start with your favorite variety of pasta – penne is always a good choice, but you also can’t go wrong with angel hair, farfalle or ziti – and then add your favorite vegetables.
When making this for ourselves, we use grape tomatoes, sliced mushroom and cucumbers. Incorporate cubes of fresh mozzarella or cheddar. Finally, top with cubes of our rich Forest Mushroom Pâté .
Don’t forget to bring bowls, forks and a serving spoon!
Truffle Balls
We’re not sure what the best part of this recipe is – the truffle, the mousse, the poppable, bite-size shape, or the fact that you don’t have to turn on your oven to make them. For years, our Truffle Mousse Balls have inspired rave reviews, yet this three-ingredient recipe takes only minutes to make.
Simply roll teaspoon-sized balls of our Truffle Mousse into a mixture of Panko breadcrumbs and thyme, then set them in the fridge until you’re ready to serve them. Make these in a large batch. The decadence of the truffle makes each bite practically melt in your mouth, keeping you coming back to the plate again and again.
The Drink
For Adults
One should always take advantage of seasonal craft beers. Brewers typically use the freshest fruits, herbs and spices on hand, meaning that during summer, we’re flush with bright, citrus-y shandys and wheat ales. Summer beers are usually light, crisp and refreshing, making them the perfect pair for rich, creamy and spicy flavors.
Likewise, IPAs are hoppy, strong beers that work incredibly well with rich flavors. For a perfect pairing, we suggest a thin slice of our Campagne pâté ‘tween the burger and the roll. Lose the ketchup though, add a pickle instead!
For the Little Ones
You can’t go wrong with a homemade lemonade! Steer away from harmful artificial sugars and syrups and embrace natural with this strawberry lemonade recipe.
Helpful Tips for the Perfect Picnic
Get Creative. You don’t have to buy anything to have a great time. It’s easy to reuse things around your house for picnic purposes. Use old jam jars to carry condiments, a thermos for ice cubes or cold drinks, and muffin tins to hold your drinks once you’re on location.
Go Recyclable. Don’t stress yourself out by carrying home a garbage bag full of dirty dishes. Choosing recyclable options such as paper plates, cups and tableware will make cleanup a snap.
Plan it Out. Find a place you’d like to spend the afternoon, scope it out – are there picnic tables, or will you need to bring a blanket? Do you need to bring chairs? Is there a BBQ? A few minutes of planning beforehand can make your afternoon one to remember.

Fresh Mango Salad
When we think of summertime salads, we think of bright, fresh flavors. For this salad, we bring together three of the best things about summer: raspberries, avocados, and mangoes. To make it hearty enough for a dinner, we use our Chicken Ballotine. Made from chicken breast and hints of tropical fruits and pistachios, this pâté makes the perfect summertime protein.
Ingredients:
Dressing:
• ½ cup fresh raspberries
• ? cup extra-virgin olive oil
• ? cup red-wine vinegar
• 1 small clove garlic, coarsely chopped
• ¼ teaspoon kosher salt
• ? teaspoon freshly ground pepper
Salad:
• Alexian Chicken Ballotine, cubed
• 1 cup fresh raspberries
• 8 cups of spinach (or salad greens of your choosing)
• 1 ripe mango, diced
• 1 ripe avocado, diced
• ½ cup thinly sliced red onion
• ¼ cup toasted chopped pistachios, optional
Preparation:
1. To make the dressing, puree ½ cup raspberries, oil, vinegar, garlic, salt and pepper in a blender until combined.
2. Divide the greens among serving dishes. Top each plate of greens with ¼ cup of the Chicken Ballotine
3. In a medium bowl, combine mango, avocado, remaining raspberries and onion. Pour the dressing on top and gently toss to coat.
4. Top each with pistachios, and enjoy!
Cranberry Pecan
Tart cranberries, nutty pecans and savory Chicken and Veal Pâté come together to create our go-to salad for hazy summer afternoons.
Ingredients:
• Chicken and Veal Pâté, cubed
• 1 cup pecan halves, roasted
• 2 tablespoons raspberry vinegar
• 1/2 teaspoon Dijon mustard
• 1/2 teaspoon sugar
• 1/2 teaspoon salt
• freshly ground black pepper to taste (optional)
• 6 tablespoons olive oil
• 6 cups mixed salad greens, rinsed and dried
• 3/4 cup dried cranberries
• 1/2 medium red onion, thinly sliced
• crumbled goat cheese
Directions:
1. In a small bowl, stir together the vinegar, mustard, sugar, salt, and pepper; mix until sugar and salt dissolve. Whisk in olive oil.
2. In a salad bowl, toss together the greens, cranberries, pecans, onions, and cheese. Top with the Chicken and Veal cubes. Drizzle with vinaigrette before serving.
Green Goddess
The Green Goddess salad is one that everyone has their own variation of and recipe for. Some people put chickpeas, others put chopped bacon, we use our Herb de Provence Chicken Pâté . The creamy avocado and crunchy fresh greens mesh perfectly with the fresh blend of herbs in our pâté to create a more sophisticated take on the salad.
Ingredients:
• Herb de Provence Chicken Pâté , cubed
• 6 cups spinach
• ½ cucumber, sliced
• 1 ½ cups pea shoots
• ? cup feta cheese
• ½ cup almonds, chopped
• 1 avocado, cut into chunks
Directions:

Caprese Salad
Caprese salad are almost synonymous with summer – light, refreshing and filling, the classic combination of basil, tomato and mozzarella is always a good choice. Our rendition gives the traditional salad a modern twist – using our Tomato Basil Pâté and a handful of fresh spinach.
Ingredients:
• Alexian Tomato Basil Pâté , sliced
• 8 oz. fresh mozzarella, sliced
• Balsamic vinegar or dressing
Alternate placing slices of Tomato Basil and mozzarrella on a plate. Drizzle with your choice of balsamic and garnish with fresh basil.

Roasted Butternut Squash
We’re at the time of the year where we have the best of both worlds – fresh spring veggies are making their way into grocery stores, while winter squashes are still keeping a strong presence.
Create a savory, warming toast with our Eggplant and Goat Cheese Terrine. Start by roasting butternut squash in the oven until soft. Scoop out and mash. Spread goat cheese over a toasty baguette, followed by our Eggplant and Goat Cheese terrine. Spread butternut squash over the baguette, top with black pepper, slice and serve alone or with a protein of your choice.
Balsamic Bruschetta
This Bruschetta recipe is one to keep on hand for a lighter rendition of pizza night – guaranteed to be family-approved.
Slice and lightly toast a baguette. Spread a thin layer of our Tomato-Basil Vegan Pâté onto each of the slices and set aside. Combine diced tomatoes and roughly chopped basil in a small bowl. Stir in balsamic vinegar until all pieces are just coated. Spoon the mixture onto each slice, and top with a sprinkle of parmesan cheese or fresh, sliced mozzarella.
Peachy Dreams
Summer may be months away, but that doesn’t mean we’re not dreaming of it. Peach preserves pair perfectly with our Grand Marnier Pâté. Our Grand Marnier is known for its deep cognac flavors, accented by pops of orange zest. Paired with peach preserves, you have the perfect ode to summer.
Start with a fresh, lightly toasted baguette. Next, place a moderate layer of peach preserves, followed by a generous layer of the Grand Marnier. Our Eggplant, Goat Cheese and Roasted Red Pepper Mousse are packed with delicious flavors. You can easily serve it on its own at room temperature, but we love creating something with a little bit more flare.
To create a creamy dip, drain and rinse one can of white beans. Stir them into the pâté, mashing slightly until thoroughly combined. Top with crumbled goat cheese, to taste, and heat at 350 degrees F until warm all the way through.
Truffle & Gruyere with Caramelized Onion
The holidays are a time of indulgence. What is more indulgent than a decadent Truffle Mousse dip?
To make this instant-sensation, start by sautéing one yellow onion in a saucepan over medium-high heat with olive oil and salt and pepper to taste. Once caramelized, remove from heat. Next, grate 8 ounces of Gruyere cheese. In a medium bowl, mix ¾ of the cheese and the Truffle Mousse. Spread into a small baking pan. Top with the caramelized onions, a generous drizzle of honey, and the remainder of the cheese.
Let it bake at 425 degrees F for about 25 minutes, or until the cheese is melted and hot.

For a simple, effortless dip that’s rich in flavor, look no further than a bold smoked cheddar dip with our savory Duck Rillette.
Simply pour melted smoked cheddar over an even layer of warmed Duck Rillette and enjoy! If you wish, you can also stir it into the Rillette so it’s evenly distributed into the dip. This is enjoyed with crackers or toasted baguette.
