Dilly Truffly Mousse Ball

What you need

• 1 (5-oz) Alexian Truffle Mousse

• 1 1?2 cups grated sharp cheddar cheese

• 1?2 cup chopped dill pickle

• 1?4 cup finely chopped green onion

• 2 Tbsp mayonnaise

• 1 tsp Worcestershire sauce

• 1?2 cup chopped walnuts

• 2 Tbsp finely chopped parsley

Instructions

• Combine first six ingredients, beating until smooth.

• Cover and chill until firm or overnight.

• Shape into a ball and roll in mixture of nuts and parsley.

• Serve it on a plate surrounded by assorted crackers.

Chicken ballotine wraps

What you need

Chicken Ballotine

• Pineapple

• Avocado

• Leafy greens

• Fresh bell peppers

• Light vinaigrette

• Whole wheat tortilla

It’s no secret that our pâtés make a great protein base for a wrap – but our Chicken Ballotine, in particular has a unique tropical flavor profile that makes it perfect for pairing with some of spring’s most popular produce.

Try cutting our Chicken Ballotine into bite-sized chunks and mix with slices of pineapple, avocado, leafy greens, fresh bell peppers and a light vinaigrette. Spoon the mixture into a large, whole wheat tortilla. . Wrap it up, slice it in half, and enjoy a lunch filled with bright and delicious flavors.

Tomato Basil Pâté & cherry tomatoes

What you need

Tomato basil pâté

• Cherry tomatoes

Instructions

For a healthy and simple appetizer, cut the pâté into cubes and serve with cherry tomatoes on toothpicks.

Eggplant and goat cheese salad

What you need

Eggplant and goat cheese pâté

• Crunchy bread

• Plain goat cheese

• Simple green salad

• Croutons

• Sliced tomatoes

• Mild dressing

Instructions

Cut the pâté into small cubes and mix it with all the ingredients on a plate. Add the mild dressing.

Mushroom Leek Stuffing

What you need

Preheat oven to 350F.

Melt butter in a large skillet over medium heat. Add onion, celery, leeks, mushrooms and ground sage (and rosemary if using). Cook over medium-low until tender (do not brown), about 10-12 minutes.

Place bread cubes in a large bowl. Add vegetable mixture, parsley, fresh herbs and the Forest Mushroom pâté.

Pour broth over the top until cubes are moist (but not soggy) and gently toss.

You may not need all of the broth. Season with salt and pepper to taste.
Place mixture in a serving dish, dot with additional butter and cover.

Bake 35 minutes, uncover and bake an additional 10 minutes.

Simply cut this coarse-cut pâté into small cubes and mix into your stuffing base, along with sauteed garlic, shallot, parsley, and thyme.

As it cooks, the flavors of pheasant and rosemary will blend into your stuffing, giving your whole meal a heavenly taste.

Cabbage and pâté roll

What you need

• Red and green cabagge leaves

• Coarse pâté

• Chives or herbs

• Whole grain bread

• Mustard

Instructions

Briey blanch red and green cabagge leaves. Then place coarse pâté slices in the middle and add chives or herbs. Roll up the cabbage leaf and pin it together with a toothpick. Serve with whole grain bread and mustard.

Meat pâté with cherries

What you need

• Meat pâté

• Cherries

• Cognac or Brandy

Instructions

Serve meat pâté slices with brandied cherries/ sour cherries. Sprinkle with some extra Cognac or Brandy. It’s an excellent way to spoil yourself and a guest!

Vegan snacks

What you need

Curry and bell pepper terrine

Instructions

Spread some of our Curry and Bell pepper vegan pâté on slices of green peppers, or fill the hollow side of celery sticks with Tomato basil vegan pâté for a well-balanced snack.

Deviled pâté

• Alexian Creamy & Spreadable Mousse of your choice (we like: Black Peppercorn or Truffle)

• Hardboiled eggs

• Fresh herbs or relish

Instructions

Mix the mousse of your choice with a fork and use it to stuff hardboiled eggs. Decorate it with fresh herbs or relish on top.

Pâté puff pastry

• Puff pastry

• Any mousse of your choice

• Parsley and basil

Instructions

Fill puff pastry shells with a spreadable mousse-style pâté and decorate with springs of parsley and basil.

Easy pâté dip

What you need

• Tortilla or pita chips

Vegetable pâté

Instructions

Make a dip for tortilla or pita chips by lightly mashing a vegetable or vegan pâté with a fork. Our mixed vegetable pâté is a perfect choice for this appetizer.

Pâté and fruit

What you need

• Any coarse-cut variety

• Grapes

• Strawberries

Instructions

Dice any coarse-cut variety and serve with toothpicks as you would a hard cheese. Garnish the cutting board or serving tray with colorful grapes and sliced strawberries.
