New Year, New You! – Eat Your Vegetables with Alexian

It's a new year, and like many, you may be trying a new diet or meal program as part of your New Year's Resolution. Perhaps you are trying to add more vegetables to your diet, or maybe you are making a full shift to a vegetarian or vegan lifestyle. It may seem difficult, but pursuing a vegetable-based diet has never been easier, thanks to a wealth of delicious and healthy vegan and vegetable-based options.

When starting a new food program, it is important to make sure you are getting the nutrients your body needs. It is tempting to stick to salads and pasta, but we cannot live on these alone. One of the most challenging aspects of a vegetable-based or vegan diet is getting enough protein. For this, look to legumes. Beans and pulses, such as lentils and chickpeas, provide plenty of protein and energy for a healthy diet. Pair cooked legumes with fresh veggies, grains like rice or quinoa, and a bit of salad dressing for a meal that's healthy and satisfying.
