Pâté of the Month:
Goose Liver Mousse

Our Goose Liver pâté is made with port wine and spices. Port wine creates a luxuriously varied flavor profile along with sherry, dried chicken stock, onions, garlic and the other special spices that make up this smooth, rich delight.

A hearty flavor makes this pâté a perfect fall snack. Best enjoyed at room temperature, the goose liver mousse pâté is delicious on thick, unsalted crackers, baguette or any kind of toast. Cornichons, cherry tomatoes, grapes and hard cheeses like cheddar are delicious alongside it.

Serving suggestion: Fall beer and wine pairings

For everything from an informal appetizer to a late night snack, pâté enjoyed alongside a flavorful glass of beer or wine is a combination that's tough to beat. Fall is the perfect time to enjoy the two together.

Dark beers take over in the fall. As the weather cools down and the nights get longer, the beers get darker, thicker and more flavorful. This makes them a nice pairing for paté, especially creamy mousse varieties like our Goose Liver flavor.

A creamy profile provides a texture for the deeply flavored fall beers to break through, making for interesting variations with each bite.

- Nothing says fall more than pumpkins. Beers brewed with pumpkin spices, commonly called pumpkin ales, feature bold malt flavors and softly sweet spices. Our savory patés provide delicious contrast to the sweet notes of pumpkin beers.

- Octoberfest beers are full-flavored, copper-hued brews with rich bodies. They have an aftertaste that will enhance the flavor of mousse patés like the Goose Liver.

- Along with the Goose Liver Flavor, dark seasonal beers are delicious with our course, country style patés as well.

As for wines, full flavored is the only way to go during the fall and winter. Much like beers, deeper, heartier flavors really hit the spot when the air begins to chill.

Since the Goose Liver Mousse is made with Port Wine, you will find that enjoying it with a glass of the fortified wine adds a great deal to the experience. Port wines are made by adding spirits to the wine during production, giving them a unique rich flavor and heavy texture that features natural sweetness and goes down smoothly.

If port wine isn't available, red wines with earthy flavors like Bordeaux and Cabernet are excellent too. These wines are delicious with many other pâté flavors as well, such as our Rosemary Pheasant Paté.
