Fresh Take: Summer Salads

Between the vast of in-season produce available right now and the blazing summer sun, no-cook salads are always a welcome dinner idea around our house. Bringing together two of our favorite things - summer fruits and pâté- we’ve creating recipes that we hope your family will love as much as we do.

Peach Arugula Salad

Peaches are the epitome of a summertime fruit, and right now they’re at peak juiciness! Accent the natural sweetness of the peach with our Grand Marnier Pâté. Our Grand Mariner is known for its flavors, accented by pops of orange zest. Paired with peaches, you have the perfect summer combination.

Ingredients:

Alexian Grand Marnier Pâté, cubed

4 cups of baby arugula

3 medium ripe peaches, pitted and sliced

¾ cup diced red bell pepper

¼ cup chopped walnuts (for texture)

Dressing:

1 tbsp extra virgin olive oil

1 tbsp balsamic vinegar

½ tbsp fresh squeezed lemon juice

¼ tsp kosher salt

¼ tsp fresh black pepper, to taste

Preparation

1. In a large bowl, toss together the Grand Marnier Pâté, arugula, peaches, red bell pepper and walnuts.

2. In a small bowl, whisk dressing ingredients together.

3. Divide the salad evenly among serving dishes, placing on top of the pâté.

4. Drizzle dressing on top of each dish.

Raspberry, Avocado & Mango Salad

When we think of summertime salads, we think of bright, fresh flavors. For this salad, we bring together three of the best things about summer: raspberries, avocados, and mangoes. To make it hearty enough for a dinner, we use our Chicken Ballotine. Made from chicken breast and hints of tropical fruits and pistachios, this pâté makes the perfect summertime protein.

Ingredients:

Dressing:

½ cup fresh raspberries

⅓ cup extra-virgin olive oil

⅓ cup red-wine vinegar

1 small clove garlic, coarsely chopped

¼ teaspoon kosher salt

⅛ teaspoon freshly ground pepper

Salad:

Alexian Chicken Ballotine, cubed

1 cup fresh raspberries

8 cups of spinach (or salad greens of your choosing)

1 ripe mango, diced

1 ripe avocado, diced

½ cup thinly sliced red onion

¼ cup toasted chopped pistachios, optional

Preparation:

1. To make the dressing, puree ½ cup raspberries, oil, vinegar, garlic, salt and pepper in a blender until combined.

2. Divide the greens among serving dishes. Top each plate of greens with ¼ cup of the Chicken Ballotine

3. In a medium bowl, combine mango, avocado, remaining raspberries and onion. Pour the dressing on top and gently toss to coat.

4. Top each with pistachios, and enjoy!

Strawberry Feta Salad with Black Peppercorn Mousse

Mmm...strawberries. Almost synonymous with summer, we’d be remiss if we left these berries off of our list. This salad juxtaposes the of the strawberry with the tangy feta and our rich Black Peppercorn Mousse to create a delightful salad perfect for eating on your porch.

2 ounces Alexian Black Peppercorn Mousse

8 cups fresh baby spinach or arugula

4 cups sliced fresh strawberries

¼ cup toasted almonds

¾ cup feta cheese, crumbled

Preparation:

1. Toss together your greens, feta cheese, and strawberries.

2. Divide evenly among serving dishes.

3. Add a generous spoonful of Alexian Black Peppercorn Mousse to each plate.

4. Top with crumbled feta. For added flavor, drizzle a little balsamic vinegar over the salads.
