Fall Verrines with Pate

Verrines with paté make the perfect fall treat. Tasty and simple, they can be made to celebrate the colors of the season and taste as wonderful as they look.

Layered, single serve appetizers presented in clear containers (like low-ball glasses), verrines are chic and easy to make. Great for parties, they perfectly display the vivid, contrasting colors of each ingredient. Browns, oranges, yellows and more can be presented together in attractive blends of delicious ingredients. Our patés make a fantastic main layer for verrines.

Hearty flavors like our Duck Liver Mousse with Cognac or Pheasant and Rosemary taste great with fall flavors, like butternut squash. The ultimate fall vegetable, it's bright orange color makes it particularly festive in October. Squash has a mellow flavor that tastes great alongside patés. Black Peppercorn or Paté de Campagne are great choices, too.

To create a warm, smooth texture, roast a few buttered, halved squashes. Then scoop the squash into verrine glasses and add a layer of paté. Additional layers of sliced beets, cabbage or chopped cauliflower can be added. Small cherry tomatoes and cubed hard cheeses are flavorful additions, too.

For a vegetable lovers delight, try serving our Mixed Vegetable or Tomato Basil patés in verrines with layers of chopped carrots, celery and rutabaga.
