Duck Liver Mousse with Cognac

Made with duck liver and pork with fine cognac – The award-winning Alexian exclusive is fresh, natural and sinfully delicious.

Duck, pork, mushrooms, specially blended spices and a dash of fine cognac go into our Duck Liver Mousse pâté. A recent winner of a Good Food award in San Francisco, this pâté is smooth and spreadable.

The Duck Liver mousse is a versatile food that's delicious whether simply spread on a piece of bread or used in a more intricate presentation.

For a fun, no fuss and delicious snack or appetizer, try these serving tips:

1. Simple crepe:

Crepes are an authentic French dish that's delicious and simple to make.

Essentially an extra thin pancake made with wheat flour, a crepe can be served unadorned or with a savory spread such as the Duck Mousse pâté.

Crêpes should be fluffy, evenly cooked and slightly crisp. Anyone can prepare them – the simple steps are the same as those required to make pancakes.

Just remember to use a crepe recipe that does not feature sweet dough so as not to clash with the salt in the pâté. Refrigerate the pâté for about one hour before cooking the crepes and make sure to let the crepes cool before spreading them with pâté. Fold the crepes into cylinders and cut in half for an adorable app!

2. Puff pastry filling:

Another simple and delicious way to savor the flavors of the Duck Mousse pâté is to spread a generous amount of it inside a puff pastry. Any puff pastry will do, though as with the crepes, unsweetened dough works best because of the pâté's saltiness

When the cooked puff pastry cools, cut it into an even number of pieces. Roll each piece into a strip, and then place balls of pâté on top of half of the strips. Place the other strips on top and press the pastry down around the pâté to create a pastry pâté delight!

3. Cocktail pairing:

A pâté made with cognac, can, of course be enjoyed with a bit of the liquor as well. Whether poured neat, on ice or as part of a cocktail, cognac make a sinfully scrumptious pair for the Duck mousse.

We suggest:

Cognac served in a snifter glass, with selections of sliced goat cheese and hard cheddar. If cocktails are more your style, try this delectable drink:

Champs-Elysées Cognac Cocktail
- 2 ounces Cognac
- 1/2 ounce yellow Chartreuse
- 1/2 ounce fresh lemon juice
- ½ tsp sugar
- Dashes Angostura bitters

Combine all ingredients in an ice-filled shaker and shake until cold.
