Bites on the Go
It seems like there's hardly any transition period between the last lazy days of summer and the frantic days of fall. Between taking the kids to school, sports practice, book club and the dozen other activities that resume in the fall - there's no time left in the day.
This autumn, Alexian invites you to indulge in a little "me-time," by indulging in one our decadent bites that you can make ahead and take with you.
Roll-Ups
Our country style pâtés are the perfect protein in a simple roll up. Simply spread a layer of Dijon mustard on a whole wheat wrap, add a thin slice of our Campagne and a handful of crunchy greens. Roll the wrap up tightly, cut it in half, and let the decadence make your afternoon a little better.
Grab + Go Veggie Cups
This is a suggestion that makes a great snack for you and for the kids. Puree a ripe avocado with a dash of olive oil and a bit of lemon juice. Mix in terrine and combine until smooth.
Spoon our Goat Cheese and Eggplant terrine into small cups, and top with your favorite veggie sticks - celery, carrot, zucchini.
Pasta in a Jar
ar lunches are the adult version of brown-bagging it. You can use leftover pasta to make a great, perfectly portioned lunch. Layer a handful of penne, fresh spinach leaves, cherry tomatoes and cubes of our Forest Mushroom (if you're making it ahead of time, leave the pâté until the day you're going to eat it for optimal freshness).
When you're ready, mix the pâté into the pasta salad with a bit of olive oil and vinegar or your favorite Italian dressing.
Wonton Wrapper Cup
Make-ahead snacks are great, but by the end of the week you're probably getting tired of the same thing. Here's a bite that's both easy to make ahead and versatile.
Simply press wonton wrappers into a cupcake mold and heat until toasty. Fill them with a scoop of your favorite pâté (we love the Truffle Mousse, but feel free to experiment or try a new one every day.
Top with your favorite crunchy greens or sautéed veggies, and enjoy!
